12 oz (340g) pasta (penne or rigatoni work well)

1 cup fig jam (preferably homemade or high-quality store-bought)

1 cup ricotta cheese

1 cup grated mozzarella cheese

½ cup grated Parmesan cheese

2 cups fresh spinach (you can substitute with kale)

2 cloves garlic, minced

1 tsp olive oil

Salt and pepper to taste

½ tsp red pepper flakes (optional for a bit of heat)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Preheat the oven to 375°F (190°C). In a large pot of boiling salted water, cook the pasta according to package directions until al dente. Drain and set aside.

    Prepare the Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes, if using. Remove from heat.

      Mix Ingredients: In a large mixing bowl, combine the cooked pasta, wilted spinach, ricotta cheese, and fig jam. Stir until everything is well coated. Taste and adjust seasoning if desired.

        Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish. Top with the grated mozzarella and Parmesan cheese evenly.
