400g (14 oz) pasta (penne or rigatoni)

200g (7 oz) feta cheese, crumbled

500g (1 lb) cherry tomatoes, halved

4 cloves garlic, minced

1 medium onion, chopped

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large oven-safe skillet or baking dish, heat 4 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Add Tomatoes and Spices: Add the halved cherry tomatoes, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Cook for about 5-7 minutes, allowing the tomatoes to soften and release their juices.

          Combine Pasta and Feta: Add the cooked pasta and crumbled feta cheese to the skillet with the tomato mixture. Gently toss everything together, ensuring the pasta is well coated with the sauce.

            Bake the Dish: Transfer the skillet (or pour into a baking dish if not oven-safe) into the preheated oven. Bake for 20-25 minutes until the pasta is heated through, and the edges of the feta start to turn golden and slightly crispy.

              Garnish and Serve: Remove from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves and serve with grated Parmesan cheese on top.
