8 oz fettuccine pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts, sliced into thin strips

Salt and pepper, to taste

3 cloves garlic, minced

2 cups fresh spinach

1 cup frozen peas

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

¼ teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes or until golden brown and cooked through. Remove from the skillet and set aside.

      Sauté Garlic and Vegetables: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and frozen peas, and cook until the spinach is wilted, about 2-3 minutes.

        Make the Alfredo Sauce: Pour in the heavy cream and stir to combine. Add the grated Parmesan cheese, Italian seasoning, and nutmeg (if using). Whisk until the sauce is smooth and begins to thicken, about 3-4 minutes.

          Combine Everything: Return the cooked chicken to the skillet and toss to coat in the sauce. Gently mix in the cooked fettuccine until everything is well combined and heated through.
