1 pound of smoked sausage (kielbasa or andouille), sliced into rounds

1.5 pounds of baby potatoes, halved or quartered (depending on size)

3 medium carrots, chopped into bite-sized pieces

1 large onion, diced

4 cloves of garlic, minced

1 bell pepper (any color), diced

2 cups of vegetable or chicken broth

1 tablespoon olive oil

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Vegetables: Wash and chop all vegetables as directed. Set aside for easy assembly.

    Sauté the Sausage: In a skillet over medium heat, add the olive oil and sauté the sliced sausage until browned. This step adds depth of flavor. Once browned, transfer to the crockpot.
