Fall Crockpot Sausage and Kale Stew

1 pound Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, diced (e.g., Yukon gold or sweet potatoes)

1 bunch of fresh kale, stems removed and chopped

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes (with juices)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Optional: ½ cup heavy cream or coconut milk for creaminess

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Sausage: In a skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and slightly crispy (about 5-7 minutes). Drain excess fat and transfer the sausage to your crockpot.

    Sauté Veggies: In the same skillet, add the diced onions and cook until translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional minute until fragrant. Transfer the onion and garlic to the crockpot.

      Add Remaining Ingredients: To the crockpot, add the sliced carrots, diced potatoes, diced tomatoes (with juices), thyme, oregano, and broth. Stir well to combine.

        Season: Season the mixture with salt and pepper to taste. Adjust the seasoning according to your preference.

          Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.

            Incorporate Kale: In the last 30 minutes of cooking, stir in the chopped kale, allowing it to wilt and soften.
