Ingredients

2 cups elbow macaroni

2 cups broccoli florets, fresh or frozen

4 cups vegetable broth

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon mustard powder

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup panko breadcrumbs (optional for topping)

2 tablespoons butter, melted (optional for breadcrumb topping)

Instructions

Prep the Crockpot: Start by greasing the inside of your crockpot with a bit of olive oil to prevent sticking.

Combine Ingredients: Add the elbow macaroni, broccoli florets, vegetable broth, whole milk, garlic powder, onion powder, smoked paprika, mustard powder, salt, and pepper into the crockpot. Stir well to ensure that the macaroni and broccoli are evenly coated.

Cook: Cover the crockpot with the lid and cook on low for about 3 to 4 hours, or until the macaroni is cooked al dente and the broccoli is tender. Stir occasionally to prevent sticking.

Add Cheese: Once the macaroni is cooked, add in the shredded sharp cheddar and mozzarella cheeses. Stir until the cheeses melt and create a creamy sauce. If you prefer a thicker consistency, let it cook for an additional 15-20 minutes on low.

Optional Topping: For a crunchy topping, mix the panko breadcrumbs with melted butter in a separate bowl. Sprinkling this mixture over the mac and cheese during the last 30 minutes of cooking provides a delightful texture contrast.

Serve: Once everything is melted and combined, give it a final stir, taste, and adjust seasoning if necessary. Serve hot, garnished with a sprinkle of extra cheese or herbs if desired.
