Ingredients

4 boneless, skinless chicken breasts

1 box (12 oz) of stuffing mix (your favorite, e.g., cornbread or herb)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup fresh cranberries (or dried cranberries)

1 cup chopped celery (about 2 stalks)

1 medium onion, finely chopped

2 cloves garlic, minced

2 teaspoons dried thyme

2 teaspoons dried sage

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, thyme, and sage. In a skillet, heat olive oil over medium heat, and sear the chicken for 3-4 minutes per side until golden brown. This adds depth of flavor.

Layer the Crockpot: Spray the inside of the crockpot with non-stick cooking spray. Layer the bottom with the chopped celery, onion, and garlic. Sprinkle the fresh or dried cranberries over the vegetables.

Add the Chicken: Place the seared chicken breasts on top of the vegetable and cranberry layer.

Mix the Stuffing: In a bowl, combine the stuffing mix with the cream of chicken soup and chicken broth. Stir until just combined, then pour this mixture evenly over the chicken.

Cook: Cover the crockpot and cook on low for 4-6 hours, or until the chicken is cooked through and easily shreds with a fork.

Final Touches: Once cooked, use two forks to shred the chicken and mix it gently with the stuffing and vegetables. Let it sit for about 10 minutes before serving.

Garnish: Sprinkle freshly chopped parsley on top for a touch of color and freshness.

Serve: Spoon the chicken and stuffing mixture onto plates and enjoy this warm, comforting dish reminiscent of fall flavors!
