Ingredients
  

4 cups of fresh corn kernels (about 6 ears of corn)

2 tablespoons mayonnaise

2 tablespoons sour cream

1 teaspoon chili powder

1 teaspoon smoked paprika

1 clove garlic, minced

1 tablespoon lime juice (freshly squeezed)

1/2 cup crumbled cotija cheese

2 tablespoons fresh cilantro, chopped

Lime wedges, for serving

Salt and pepper, to taste

Instructions
 

Prep the Corn: If using fresh corn, shuck the corn and remove the kernels from the cobs. If using frozen corn, thaw and drain well.

    Cook the Corn: In a large skillet over medium heat, add the corn kernels. Sauté for about 5-7 minutes until they start to caramelize and turn golden brown, stirring occasionally. Remove from heat and let cool slightly.

      Make the Sauce: In a mixing bowl, combine mayonnaise, sour cream, chili powder, smoked paprika, minced garlic, and lime juice. Mix well until smooth and creamy.

        Combine: Add the sautéed corn into the sauce mixture. Stir well to coat all the corn evenly. Season with salt and pepper to taste.

          Serve: Divide the corn mixture into individual cups. Top each cup with crumbled cotija cheese and sprinkle with fresh cilantro.

            Garnish: Serve with lime wedges on the side for an extra citrusy kick. Enjoy warm!
