Egg and Chili Breakfast Casserole

8 large eggs

1 cup milk (whole or dairy alternative)

1 cup shredded cheddar cheese

1 cup diced bell peppers (mix of red and green)

1 small onion, finely chopped

1 can (15 oz) black beans, drained and rinsed

1 can (4 oz) diced green chilies (mild or hot based on preference)

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

Salt and pepper to taste

1 package (8 oz) tortilla chips, slightly crushed

Fresh cilantro, chopped, for garnish (optional)

1 avocado, diced for topping (optional)

Hot sauce for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, ground cumin, chili powder, smoked paprika, salt, and pepper until fully combined. Set aside.

      Sauté the Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion and bell peppers until they are soft and translucent, about 5-7 minutes. Remove from heat.

        Combine Ingredients: In the prepared baking dish, layer the crushed tortilla chips evenly on the bottom. Spread the sautéed vegetables and black beans over the chips. Pour the egg mixture over the top, making sure it’s evenly distributed. Sprinkle the diced green chilies and shredded cheddar cheese on top.

          Bake the Casserole: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are fully set and the top is golden and slightly bubbly. A knife inserted into the center should come out clean.
