Easy Zucchini Pasta Bake

3 medium zucchinis, spiralized or thinly sliced

2 cups marinara sauce (homemade or store-bought)

2 cups cooked pasta (your choice: penne, fusilli, or gluten-free)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Zucchini: If using spiralized zucchini, set it aside to allow excess moisture to drain. If using sliced zucchini, toss with a pinch of salt and place in a colander to let it release some water for about 10 minutes. Pat dry with a paper towel.

      Mix Pasta: In a large mixing bowl, combine the cooked pasta, marinara sauce, ricotta cheese, half of the mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper. Stir until everything is well combined.

        Layer Ingredients: In a greased 9x13-inch baking dish, spread half of the pasta mixture evenly on the bottom. Layer the zucchini slices on top, followed by the remaining pasta mixture. Sprinkle the remaining mozzarella and Parmesan cheese over the top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil to allow the cheese to brown and bubble. Continue baking for an additional 15 minutes.

            Cool and Serve: Once done, remove from the oven and let it cool for 5 minutes. Garnish with fresh basil leaves if desired. Cut into squares and serve warm.
