Easy Vegetable Beef Soup

1 lb (450g) beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 stalks celery, sliced

3 medium potatoes, diced

1 cup green beans, chopped (fresh or frozen)

1 cup corn kernels (fresh, frozen, or canned)

1 (14.5 oz) can diced tomatoes with juice

4 cups beef broth (low sodium recommended)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish (optional)

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and sprinkle with salt and pepper. Sear the meat until it's browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 4-5 minutes until the onion is translucent. Add the minced garlic and cook for another minute, stirring frequently.

      Combine Ingredients: Return the browned beef to the pot. Stir in the diced potatoes, green beans, corn, thickened diced tomatoes (with juice), beef broth, Worcestershire sauce, thyme, and oregano.

        Simmer the Soup: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1 hour, stirring occasionally, until the beef is tender and the vegetables are cooked through.
