1 sheet of puff pastry (thawed if frozen)

4 medium ripe tomatoes (sliced)

1 cup fresh basil leaves

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

2 tablespoons olive oil

2 cloves garlic (minced)

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 egg (beaten, for egg wash)

Optional: sliced olives or capers for garnish

Prepare the Oven and Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface to fit your tart pan, ensuring it's about 1/4-inch thick. Transfer it to the pan and trim any excess.

    Make the Cheese Mixture: In a bowl, combine the ricotta cheese, half of the mozzarella cheese, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix until smooth and well incorporated.

      Assemble the Tart: Spread the ricotta mixture evenly over the puff pastry base. Layer the sliced tomatoes on top, overlapping slightly. Sprinkle the remaining mozzarella cheese over the tomatoes.
