Easy Taco Rice Casserole

1 cup uncooked white rice

2 cups water or chicken broth

1 pound ground beef or turkey

1 packet taco seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (Ro-tel)

1 cup shredded cheddar cheese

1 cup salsa

1-2 cups shredded lettuce (for topping when serving)

1 avocado, diced (for topping when serving)

Sour cream (optional, for serving)

Fresh cilantro, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring the water or chicken broth to a boil. Stir in the uncooked rice. Reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.

      Brown the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula. Drain any excess fat from the pan.

        Season the Meat: Add the taco seasoning mix to the cooked meat, along with the black beans, corn, and diced tomatoes with green chilies. Stir to combine and let it simmer for about 5-7 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, meat mixture, salsa, and half of the shredded cheddar cheese. Stir until everything is evenly mixed.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

              Add Cheese: Sprinkle the remaining shredded cheddar cheese on top of the casserole.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

                  Serve: Once out of the oven, let the casserole cool for a few minutes. Serve warm topped with shredded lettuce, diced avocado, and a dollop of sour cream if desired. Garnish with fresh cilantro for an extra pop of flavor.
