Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup cooked rice (white, brown, or quinoa)

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: shredded cheese, sour cream, jalapeños, salsa

Instructions

Prepare the Chicken: Start by seasoning the chicken breasts with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Rub the spices into the chicken for even coating.

Cook the Chicken: Heat a skillet over medium-high heat and add the seasoned chicken. Cook for about 6-7 minutes on each side until the chicken is golden brown and fully cooked (internal temperature should reach 165°F/75°C). Remove from the skillet and let it rest for a few minutes before slicing it into strips.

Prepare the Base: In the same skillet, add the corn and black beans. Sauté for about 2-3 minutes until heated through. Mix in the cooked rice until everything is combined and warmed.

Assemble the Bowls: In bowls, layer the rice, corn, and black bean mixture. Top with sliced chicken, cherry tomatoes, diced avocado, and chopped cilantro.

Add the Citrus Kick: Drizzle fresh lime juice over the top and add any optional toppings like shredded cheese, sour cream, jalapeños, or salsa to elevate the flavors.

Serve and Enjoy: Mix everything together to combine the flavors and enjoy your vibrant Southwest Fiesta Bowl!
