1 lb fresh shrimp, peeled and deveined

1 cup fresh lime juice (about 8-10 limes)

1 medium red onion, finely chopped

1 cup cherry tomatoes, diced

1 medium cucumber, peeled and diced

1 jalapeño, finely chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

12 small lettuce leaves or mini tortilla cups (for serving)

Optional: avocado slices for garnish

Instructions
 

Prep the Shrimp: In a medium-sized pot, bring water to a boil. Add the shrimp and cook for 1-2 minutes until they turn pink and opaque. Drain and transfer to an ice bath to stop cooking. Once cool, chop into small pieces.

    Marinate the Shrimp: In a large mixing bowl, combine the cooked shrimp and fresh lime juice. Cover and let it marinate in the refrigerator for about 30 minutes to “cook” in the lime juice.

      Combine Ingredients: After marinating, add the chopped red onion, diced cherry tomatoes, cucumber, jalapeño, and cilantro to the shrimp mixture. Toss gently to combine and season with salt and pepper to taste.

        Assemble: Place your lettuce leaves or tortilla cups on a serving platter. Spoon the ceviche mixture into each cup or leaf, ensuring they are adequately filled.

          Garnish and Serve: If desired, add slices of avocado on top of each ceviche cup for an extra creamy texture. Serve immediately for the freshest taste, and enjoy!
