1 lb (450g) cooked shrimp, peeled and deveined

½ cup breadcrumbs (Panko preferred for extra crunch)

¼ cup mayonnaise

1 large egg

2 green onions, finely chopped

1 garlic clove, minced

1 tbsp fresh parsley, chopped (or 1 tsp dried)

1 tsp Old Bay seasoning (or your favorite seafood seasoning)

Salt and pepper, to taste

2 tbsp olive oil (for frying)

For the Lemon Aioli:

½ cup mayonnaise

1 garlic clove, minced

Juice of 1 fresh lemon

Zest of 1 lemon

Salt and pepper, to taste

Prepare the Shrimp: Roughly chop the cooked shrimp into small pieces and place them in a mixing bowl. You can coarsely blend them using a food processor for a smoother texture if desired.

    Mix the Ingredients: To the bowl with the shrimp, add the breadcrumbs, mayonnaise, egg, chopped green onions, minced garlic, parsley, Old Bay seasoning, salt, and pepper. Mix everything together until well combined.

      Form the Cakes: Using your hands, shape the shrimp mixture into small patties, approximately 2-3 inches in diameter. You should get about 8-10 cakes depending on the size.

        Chill the Cakes: Place the formed patties on a parchment-lined baking sheet and refrigerate for at least 20-30 minutes to help them firm up, making them easier to fry.
