Ingredients

4 medium zucchinis, sliced into half-moons

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 tablespoon balsamic vinegar

2 tablespoons grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions

Prep the Zucchini: Rinse the zucchinis under cold water, then slice them into half-moon shapes, about 1/4 inch thick.

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Allow the oil to warm for about 1-2 minutes.

Add Garlic: Add minced garlic to the skillet and sauté for about 30 seconds, stirring constantly to avoid burning.

Cook the Zucchini: Add the sliced zucchini to the skillet. Stir well to coat the zucchini in the oil and garlic. Sprinkle with salt, black pepper, and red pepper flakes (if using) and sauté for 5 to 7 minutes until the zucchini is tender but still crisp.

Finish with Balsamic: Drizzle the balsamic vinegar over the zucchini and toss to combine. Cook for an additional minute to allow the flavors to meld.

Serve: Remove from heat and sprinkle grated Parmesan cheese over the top. Garnish with fresh basil leaves for a burst of flavor and color.

Enjoy: Serve hot as a side dish or a nutritious topping for pasta, quinoa, or a salad.
