Ingredients

2 ¼ teaspoons active dry yeast (1 packet)

1 cup warm water (110°F)

2 tablespoons granulated sugar

2 tablespoons unsalted butter, melted

1 teaspoon salt

3 cups all-purpose flour, plus extra for dusting

1/4 cup baking soda (for boiling)

1 large egg (for egg wash)

Coarse sea salt (for topping)

Optional: melted butter for brushing

Instructions

Activate the Yeast: In a large bowl, combine the warm water, granulated sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough: Once foamy, add the melted butter and salt to the yeast mixture. Gradually stir in the flour, 1 cup at a time, until a shaggy dough forms.

Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise: Place the kneaded dough into a greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour or until it doubles in size.

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Shape the Rolls: After the dough has risen, punch it down and divide it into 12 even pieces. Shape each piece into a smooth ball.

Prepare the Baking Soda Bath: In a large pot, bring about 4 cups of water to a boil and stir in the baking soda.

Boil the Rolls: Working in batches, boil each dough ball for 30 seconds, then remove them with a slotted spoon and transfer to the prepared baking sheet.

Egg Wash: In a small bowl, beat the egg and brush it over each boiled roll to give them a shiny finish. Sprinkle with coarse sea salt.

Bake: Bake the rolls in the preheated oven for 12-15 minutes or until they are golden brown.

Cool and Serve: Once baked, remove the rolls from the oven and let them cool on a wire rack. Brush with melted butter if desired, then serve warm and enjoy!
