1 baguette, sliced into 1/2-inch rounds

8 oz goat cheese, softened

4 ripe peaches, sliced thinly

2 tablespoons honey

1 tablespoon fresh lemon juice

1 tablespoon fresh thyme, chopped (plus extra for garnish)

1 teaspoon balsamic glaze (optional)

Olive oil, for drizzling

Salt and pepper, to taste
