Easy Grilled Thai Chicken Skewers

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/2 teaspoon red pepper flakes (adjust for spice level)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, ground coriander, turmeric powder, and red pepper flakes. Mix well. Add the cubed chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Skewers: If using bamboo skewers, make sure they’ve been soaked in water for at least 30 minutes to prevent burning. This will help them hold up while grilling.

      Skewer the Chicken: Once marinated, thread the chicken pieces onto the skewers, packing them closely but leaving a bit of space between each piece for even cooking.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.

          Grill the Skewers: Place the chicken skewers on the grill. Cook for about 5-7 minutes on each side, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
