For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs

3 tablespoons olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess moisture squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of 1/2 lemon

Salt to taste

For Assembling the Gyros:

4 pita breads or flatbreads

1 cup romaine lettuce, shredded

1 tomato, diced

1/2 red onion, thinly sliced

Feta cheese, crumbled (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper.

      - Add the chicken thighs, ensuring they are well-coated.

        - Cover and refrigerate for at least 30 minutes, or ideally, 2-3 hours.

          Prepare the Tzatziki Sauce:

            - In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt.

              - Mix well and adjust salt or lemon to taste. Refrigerate for at least 30 minutes to let the flavors meld.

                Cook the Chicken:

                  - Heat a grill pan or skillet over medium-high heat.

                    - Remove the chicken from the marinade and cook for about 5-7 minutes per side, or until fully cooked through and slightly charred.

                      - Let the chicken rest for a few minutes before slicing into strips.

                        Assemble the Gyros:

                          - Warm the pita or flatbreads in a dry skillet or the oven.

                            - On each pita, layer a generous amount of shredded lettuce, sliced tomatoes, red onion, and sliced chicken.

                              - Drizzle with tzatziki sauce and sprinkle with crumbled feta cheese if desired.

                                Serve:
