1 red bell pepper, chopped

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust for spice)

Salt and pepper, to taste

1 cup vegetable broth or water

4 large whole-grain tortillas

1 avocado, sliced (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prep the Ingredients: Begin by peeling and dicing the sweet potatoes, chopping the red bell pepper and red onion, and mincing the garlic.

    Layer in the Crockpot: In your crockpot, combine the diced sweet potatoes, black beans, corn, red bell pepper, red onion, and garlic.
