Easy Corn Zucchini Fritters

1 medium zucchini, grated and excess moisture squeezed out

1 cup sweet corn kernels (fresh, frozen, or canned)

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup cornmeal

2 large eggs

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon baking powder

Salt and pepper to taste

Olive oil or vegetable oil for frying

Optional: fresh herbs (like cilantro or parsley) for added flavor

Instructions
 

Prepare the Zucchini: Start by grating the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and twist to squeeze out as much moisture as possible. Set aside.

    Mix Ingredients: In a large mixing bowl, combine the grated zucchini, corn kernels, all-purpose flour, cornmeal, eggs, chopped green onions, garlic powder, onion powder, baking powder, salt, and pepper. Stir until all ingredients are well combined. The mixture should be thick and hold together.

      Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You can test if the oil is hot enough by dropping a small spoonful of the batter into the oil; it should sizzle immediately.

        Form Fritters: Using a 1/4 cup measuring spoon, scoop the batter and carefully drop it into the hot oil, flattening it slightly with the back of the spoon. Don't overcrowd the skillet; cook in batches if necessary.

          Fry Until Golden: Fry each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

            Drain Excess Oil: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Season with a sprinkle of salt while they’re still hot.
