Easy Chicken Salad Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded or diced

1/2 cup plain Greek yogurt (or mayonnaise)

1/2 cup diced celery

1/4 cup diced red onion

1/4 cup sweet pickles, chopped

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set them aside, cut-side up.

      Make the Chicken Salad Mixture: In a large mixing bowl, combine the cooked chicken, Greek yogurt, diced celery, diced red onion, chopped sweet pickles, Dijon mustard, garlic powder, lemon juice, salt, and pepper. Mix thoroughly until all ingredients are evenly coated.

        Stuff the Peppers: Spoon the chicken salad mixture generously into each bell pepper, filling them to the top.

          Bake the Peppers: Place the stuffed peppers upright in a shallow baking dish. If desired, add a little water to the bottom of the dish to keep the peppers moist. Cover the dish with aluminum foil and bake for about 25-30 minutes.

            Garnish and Serve: Once baked, remove the foil and sprinkle fresh parsley on top of each pepper for garnish. Serve warm or allow to cool slightly before serving.
