Ingredients

8 oz fettuccine pasta

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 cups fresh spinach, roughly chopped

1 cup frozen peas, thawed

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken pieces. Season with salt, black pepper, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.

Sauté the Vegetables: In the same skillet, reduce heat to medium and add minced garlic. Sauté for 1-2 minutes until fragrant. Add the chopped spinach and cooked peas, and stir until the spinach has wilted slightly.

Make the Alfredo Sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

Combine: Add the cooked fettuccine and chicken back into the skillet. Toss everything together to coat in the creamy sauce. Adjust seasoning with additional salt and pepper if needed.

Serve: Plate the Chicken Alfredo and garnish with chopped parsley. Enjoy it hot as a comforting meal!
