Easy Cheddar and Broccoli Stuffed Potatoes

4 large russet potatoes

1 cup fresh broccoli florets (steamed)

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

2 tablespoons unsalted butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

1/4 cup green onions (chopped, for garnish)

    Bake Potatoes: Wash and scrub the russet potatoes thoroughly, then prick each potato several times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare Filling: While the potatoes are baking, steam the broccoli florets until tender (about 3-5 minutes). In a large bowl, combine the steamed broccoli, shredded cheddar cheese, sour cream, melted butter, garlic powder, onion powder, salt, and pepper. Mix well until everything is coated.

        Stuff Potatoes: Once the potatoes are done baking, remove them from the oven and let them cool slightly. Slice each potato in half lengthwise and gently scoop out a portion of the flesh, leaving a little around the edges for structure. Add the scooped potato flesh to the broccoli and cheese mixture and stir to combine.
