Easy Beef Enchiladas with Black Beans

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 small onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp paprika

Salt and pepper, to taste

8 medium corn or flour tortillas

2 cups enchilada sauce (store-bought or homemade)

1 1/2 cups shredded cheddar cheese

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Add Vegetables: To the skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Season the Mixture: Stir in the black beans, cumin, chili powder, paprika, salt, and pepper. Mix well and cook for an additional 2-3 minutes until heated through. Remove from heat.

          Prepare the Tortillas: In a separate pan, heat the tortillas for about 20-30 seconds on each side to make them pliable (you can also wrap them in a damp paper towel and microwave them for 15-20 seconds).

            Fill the Tortillas: Spoon about 1/3 cup of the beef and black bean mixture onto each tortilla. Roll them tightly and place seam-side down in a greased 9x13 inch baking dish.

              Add Sauce: Pour enchilada sauce evenly over the rolled tortillas, making sure they are well covered. Sprinkle the shredded cheese on top.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and slightly golden.

                  Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with fresh cilantro and sliced jalapeños, if desired. Serve warm with sour cream on the side.
