Ingredients

8 ounces of penne pasta

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1 cup mozzarella cheese, shredded

1 cup cooked and shredded chicken (optional)

1/2 cup balsamic vinaigrette

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the cherry tomatoes and spinach, sautéing for about 3-4 minutes until the spinach is wilted.

Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, mozzarella cheese, shredded chicken (if using), balsamic vinaigrette, garlic powder, Italian seasoning, salt, and pepper. Mix well until everything is evenly coated.

Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it out evenly.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
