Easy Bacon and Spinach Pasta

8 ounces spaghetti or your preferred pasta

5 slices of thick-cut bacon, chopped

3 cups fresh spinach, roughly chopped

3-4 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese, plus extra for serving

1 tablespoon olive oil

Salt and black pepper, to taste

Zest of 1 lemon

2 tablespoons fresh lemon juice

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Using a slotted spoon, transfer the bacon to a plate lined with paper towels to drain the excess fat.

      Sauté Garlic and Spinach: In the same skillet with the bacon fat, add olive oil (if needed). Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

        Combine Pasta and Bacon: Add the drained pasta to the skillet with the spinach and garlic mixture. Toss to combine. Add the cooked bacon back into the skillet.

          Add Cheese and Seasoning: Pour in the reserved pasta water, lemon zest, and lemon juice. Sprinkle in the Parmesan cheese. Toss everything together gently until well combined. Season with salt and black pepper to taste.

            Serve: Divide the pasta into serving bowls. Top with additional grated Parmesan and a squeeze of lemon juice if desired.
