1 lb assorted mushrooms (cremini, shiitake, and oyster), sliced

2 tbsp olive oil

2 tbsp unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup Marsala wine

1 cup vegetable or chicken broth

1 tsp dried thyme

1 tsp fresh rosemary, chopped

Salt and pepper, to taste

1 cup heavy cream (optional, for a creamier sauce)

Fresh parsley, chopped (for garnish)

Cooked pasta or rice (for serving)

Instructions
 

Sauté the Aromatics:

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Once hot, add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute.

      Cook the Mushrooms:

        Add the sliced mushrooms to the skillet in batches, ensuring they don’t overcrowd the pan. Sauté until they have released their moisture and are golden brown, about 8-10 minutes. Add salt and pepper to taste while cooking.

          Deglaze the Pan:

            Pour in the Marsala wine, scraping the bottom of the skillet to release any browned bits. Allow the wine to simmer and reduce slightly for about 5 minutes.

              Add Broth and Herbs:

                Stir in the vegetable or chicken broth, dried thyme, and fresh rosemary. Bring the mixture to a simmer and let it cook for another 10-15 minutes, allowing flavors to meld. If you'd like a creamier sauce, stir in the heavy cream at this stage and simmer for an additional 5 minutes.

                  Finishing Touch:

                    Incorporate the remaining tablespoon of butter into the sauce, stirring until melted. Taste and adjust the seasoning with more salt and pepper, if needed.

                      Serve:

                        Spoon the Earthy Mushroom Marsala over cooked pasta or rice, garnishing with fresh parsley. Enjoy your comforting and flavorful dish!
