200g udon noodles

2 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1-inch piece ginger, grated

200g mixed mushrooms (shiitake, cremini, and oyster), sliced

1 cup bok choy, chopped

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

4 cups vegetable broth

1 teaspoon chili flakes (optional)

Fresh cilantro or parsley, for garnish

Instructions
 

Cook the Udon Noodles: Bring a pot of water to a boil and cook the udon noodles according to package instructions (about 3-4 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Miso Sauce: In a small bowl, whisk together the white miso paste, soy sauce, and 1/2 cup of vegetable broth until smooth. Set aside.

      Sauté the Aromatics: In a large pan or wok, heat the vegetable oil and sesame oil over medium heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the pan and sauté for about 5-7 minutes until they soften and release their juices. Stir occasionally to prevent sticking.
