2 cups low-sodium chicken broth (or water)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 avocado, diced

1 cup shredded lettuce

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Sour cream or Greek yogurt (optional for serving)

Salsa or hot sauce (optional for serving)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
