2 medium cucumbers, thinly sliced

1 large red onion, thinly sliced

1/2 cup apple cider vinegar

1/4 cup olive oil

2 tablespoons honey (or maple syrup for vegan option)

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon dill weed (fresh or dried)

Optional: 1/4 cup chopped fresh parsley for garnish

Prepare the Vegetables: Begin by washing the cucumbers thoroughly. Use a mandoline or a sharp knife to slice them thinly. Place the cucumber slices in a large mixing bowl. Next, peel and thinly slice the red onion; add it to the bowl with the cucumbers.

    Make the Dressing: In a separate bowl, whisk together the apple cider vinegar, olive oil, honey (or maple syrup), sea salt, black pepper, garlic powder, and dill weed until well combined.

      Combine Ingredients: Pour the dressing over the cucumber and onion mixture. Using tongs or a spatula, gently toss everything together until the vegetables are evenly coated in the dressing.

        Marinate: Cover the bowl with plastic wrap or transfer the salad to a sealed container. Allow the salad to marinate in the refrigerator for at least 30 minutes to let the flavors meld together. For best results, let it sit for a couple of hours or overnight.

          Serve: Before serving, give the salad a good toss. You can garnish with chopped fresh parsley if desired. Serve chilled or at room temperature.
