1 large cucumber, peeled and diced

1 cup fresh mint leaves, plus extra for garnish

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup honey or agave syrup (adjust for sweetness)

4 cups cold water

Ice cubes

Lemon slices (for garnish)

Instructions
 

Blend the Cucumber: In a blender, combine the diced cucumber and half of the mint leaves with 1 cup of cold water. Blend until smooth.

    Strain the Mixture: Pour the blended cucumber mixture through a fine-mesh strainer or cheesecloth into a large pitcher, pressing down to extract all the liquid. Discard the solids.

      Combine Ingredients: To the cucumber juice, add the freshly squeezed lemon juice, honey or agave syrup, and the remaining 3 cups of cold water. Stir well until combined.

        Infuse with Mint: Add the remaining mint leaves to the pitcher. For a stronger mint flavor, let the mixture infuse for at least 30 minutes in the refrigerator.

          Serve: To serve, fill glasses with ice cubes, pour the cucumber mint lemonade over the ice, and garnish with lemon slices and extra mint leaves.
