Ingredients

2 large cucumbers (English or Persian)

1/4 cup sesame seeds (toasted)

2 tablespoons rice vinegar

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon honey or maple syrup (for a vegan option)

1 teaspoon fresh ginger, grated

1 garlic clove, minced

1/2 teaspoon red pepper flakes (adjust to taste)

2 green onions, thinly sliced

Fresh cilantro leaves for garnish

Optional: 1/4 cup chopped peanuts for additional crunch

Instructions

Prepare the Cucumbers: Wash the cucumbers thoroughly. If using regular cucumbers, peel them if desired, then slice them into thin rounds or half-moons. Place the cucumber slices in a colander and sprinkle lightly with salt. Allow them to sit for 15 minutes to draw out excess moisture and enhance crunchiness.

Make the Dressing: In a mixing bowl, combine the rice vinegar, soy sauce, sesame oil, honey or maple syrup, grated ginger, minced garlic, and red pepper flakes. Whisk thoroughly until combined.

Toast the Sesame Seeds: In a small pan over medium heat, toast the sesame seeds for 2-3 minutes until they are golden brown and fragrant. Be sure to stir constantly to prevent burning. Remove from heat and set aside.

Combine Ingredients: Once the cucumbers have released some moisture, rinse them under cold water and pat them dry with paper towels. In a large mixing bowl, combine the cucumbers, dressing, sliced green onions, and toasted sesame seeds. If desired, add chopped peanuts for an extra crunch.

Toss and Serve: Gently toss all the ingredients until the cucumbers are evenly coated with the dressing. Taste and adjust seasoning if necessary. Garnish with fresh cilantro leaves before serving.

Chill (Optional): For optimal flavor, let the salad marinate in the refrigerator for about 15-30 minutes prior to serving.
