Ingredients

2 cans (15 oz each) chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

1 tablespoon fresh chopped parsley (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chickpeas: After rinsing the chickpeas, pat them dry with a clean kitchen towel or paper towels to remove excess moisture. This step is crucial for achieving that perfect crunch.

Season the Chickpeas: In a large bowl, combine the dried chickpeas, olive oil, ranch seasoning mix, garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until the chickpeas are well-coated with the seasoning.

Spread Evenly: Transfer the seasoned chickpeas to the prepared baking sheet. Spread them out in a single layer, ensuring they are not overcrowded for even roasting.

Roasting Time: Bake in the preheated oven for about 25-30 minutes, stirring halfway through, until the chickpeas are golden brown and crunchy. Keep an eye on them towards the end to prevent burning.

Cool and Serve: Once roasted, remove from the oven and let cool for a few minutes. If desired, sprinkle with fresh chopped parsley for a pop of color and serve in a bowl.

Store Leftovers: If you have any leftovers, store them in an airtight container at room temperature for up to 1 week.
