1 cup raw pumpkin seeds (pepitas)

1 cup granulated sugar

1/2 cup light corn syrup

1/4 cup unsalted butter, cubed

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1/2 teaspoon baking soda

Optional: 1/2 teaspoon cinnamon or sea salt for sprinkling

Prep the Baking Sheet: Line a baking sheet with parchment paper or a silicone mat for easy removal after cooking. Lightly grease the parchment to ensure the brittle doesn’t stick.

    Toast the Seeds: In a medium skillet over medium heat, lightly toast the pumpkin seeds until they become fragrant and slightly golden, about 3-5 minutes. Stir frequently to avoid burning. Remove from heat and set aside.

      Make the Sugar Mixture: In a medium saucepan over medium heat, combine the sugar, corn syrup, and butter. Stir continuously until the mixture comes to a boil.

        Cooking the Brittle: Allow the mixture to boil without stirring until it reaches a light amber color (approximately 300°F or 150°C on a candy thermometer), which should take about 10-15 minutes. Keep a close eye on it to prevent burning.

          Incorporate the Flavorings: Once the mixture has reached the desired color, remove it from heat. Quickly stir in vanilla, sea salt, and pumpkin seeds. Then add the baking soda (the mixture will bubble up), stirring until everything is combined evenly.

            Spread the Mixture: Immediately pour the hot mixture onto the prepared baking sheet. Using a spatula or a piece of greased parchment, spread it as evenly as possible.

              Cool and Set: Allow the brittle to cool at room temperature until it hardens completely, about 30 minutes to 1 hour.

                Break into Pieces: Once cooled, break the brittle into bite-sized pieces. You can sprinkle some additional sea salt or cinnamon on top while it’s still slightly warm for extra flavor if desired.
