14 oz (400g) firm tofu, pressed and drained

1 cup whole wheat pita bread, crumbled (about 2-3 pitas)

2 tablespoons nutritional yeast

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup almond milk (or any plant-based milk)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: your favorite dipping sauce (like tahini or spicy aioli)

Prep the Tofu: Start by preheating your oven to 400°F (200°C). Cut the pressed tofu into bite-sized cubes and set aside.

    Make the Pita Crust: In a food processor, add the crumbled pita bread, nutritional yeast, garlic powder, onion powder, paprika, salt, and black pepper. Pulse until the mixture resembles coarse crumbs. Transfer to a shallow bowl.

      Battering Station: Set up a three-station battering process:

        - In one bowl, pour the flour.

          - In the second bowl, pour the almond milk.

            - In the third bowl, add the pita crumb mixture.

              Coat the Tofu: Dip each tofu cube first into the flour (to coat), then into the almond milk (for moisture), and finally into the pita crumb mixture, pressing slightly to ensure the crumbs stick. Repeat for all tofu cubes.
