1 lb fresh asparagus, trimmed

1/2 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray (or light cooking oil for brushing)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

    Prepare the Breading Stations:

      - In a shallow bowl, place the all-purpose flour.

        - In a second shallow bowl, beat the eggs until well combined.

          - In a third bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

            Coat the Asparagus:

              - Working with one asparagus spear at a time, roll it in the flour, ensuring it's completely coated. Shake off any excess flour.

                - Dip the floured asparagus into the beaten eggs, allowing the excess to drip off.

                  - Finally, coat the asparagus in the panko-Parmesan mixture, pressing gently to ensure it adheres well. Repeat with all the asparagus spears.

                    Arrange on the Baking Sheet: Place the coated asparagus fries in a single layer on the prepared baking sheet. Make sure there is space between each spear to ensure maximum crunchiness.

                      Add Some Crisp: Lightly spray or brush the tops of the asparagus fries with olive oil for added crispiness.

                        Bake: Bake in the preheated oven for 15-20 minutes, or until the asparagus fries are golden brown and crispy, flipping them halfway through to ensure even cooking.
