Ingredients

2 cups pecan halves

1/2 cup maple syrup

1/4 cup brown sugar, packed

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1 tablespoon unsalted butter (for greasing)

1 cup rolled oats (optional for added texture)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.

Toast the Pecans: Spread the pecan halves evenly on the baking sheet and toast them in the oven for about 10 minutes, or until fragrant and lightly browned. Stir them halfway through to ensure even toasting.

Prepare the Glaze: While the pecans are toasting, combine the maple syrup, brown sugar, vanilla extract, salt, cinnamon, and nutmeg (if using) in a medium saucepan over medium heat. Stir until the mixture is bubbling and sugar is dissolved, about 3-5 minutes. Remove from heat.

Combine Ingredients: In a large mixing bowl, combine the toasted pecans (and oats if using) with the warm maple glaze. Stir until all the nuts are evenly coated.

Form Clusters: Using a spoon, scoop out small clusters of the mixture onto the prepared baking sheet. They can be whatever size you prefer, but aim for clusters that are about 1-2 inches in diameter.

Bake the Clusters: Bake in the oven for an additional 12-15 minutes, or until the clusters are golden and set. Keep a close eye on them to prevent burning.

Cool and Enjoy: Remove the baking sheet from the oven and let the clusters cool completely on the parchment paper. Once cooled, they will harden slightly and can be easily lifted off. Enjoy as a snack, topping for yogurt, or mixed into salads!
