1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup crumbled feta cheese

1/4 cup finely chopped fresh cilantro

2-3 medium jalapeños, deseeded and finely chopped (adjust based on heat preference)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

1 cup all-purpose flour

2 large eggs, beaten

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled feta, chopped cilantro, jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well combined and creamy.

    Shape the Bites: Using a tablespoon, scoop out the cheese mixture and form it into small balls or bites, about the size of a tablespoon. Place them on a parchment-lined baking sheet and refrigerate for about 30 minutes to help them firm up.

      Set Up the Breading Station: In one shallow dish, place the all-purpose flour. In a second dish, add the beaten eggs. In a third dish, pour the panko breadcrumbs.

        Bread the Cheese Bites: Remove the cheese bites from the refrigerator. Roll each bite in the flour, shaking off any excess, then dip into the beaten eggs, and finally coat in the panko breadcrumbs, ensuring they are fully covered.

          Heat the Oil: In a large frying pan or skillet, heat about an inch of oil over medium-high heat. You can test if the oil is hot enough by dropping in a few breadcrumbs; they should sizzle upon contact.
