1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Corn or flour tortillas (4-6, depending on size)

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup sliced green onions

1/4 cup vegan ranch dressing (optional)

Fresh cilantro for garnish (optional)

Prepare the Tofu: Begin by pressing the tofu for at least 30 minutes to remove excess moisture. Once pressed, cut it into bite-sized cubes or rectangles (about 1-inch pieces).

    Set Up Your Stations: In one bowl, combine the flour with garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second bowl, pour the plant-based milk, and in a third bowl, add the breadcrumbs.

      Bread the Tofu: Dip each piece of tofu into the flour mixture, shaking off excess. Then, dip it into the plant-based milk, followed by the breadcrumbs, ensuring each piece is well-coated. Place the breaded tofu pieces on a baking sheet lined with parchment paper.

        Bake the Tofu: Preheat the oven to 415°F (210°C). Bake the tofu in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

          Toss in Buffalo Sauce: Once the tofu is crispy, remove it from the oven and let it cool slightly. In a large bowl, toss the crispy tofu with buffalo sauce until evenly coated.
