4 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

1 large carrot, grated

1 cup green apple, julienned (such as Granny Smith)

1 cup red apple, julienned (such as Fuji)

½ cup walnuts, chopped (optional)

¼ cup dried cranberries

½ cup plain Greek yogurt

¼ cup mayonnaise

2 tbsp apple cider vinegar

1 tbsp honey or maple syrup

1 tsp Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the green cabbage, red cabbage, grated carrot, green apple, red apple, chopped walnuts, and dried cranberries. Toss until all ingredients are well mixed.

    In a separate small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth and creamy.

      Pour the dressing over the cabbage and apple mixture. Toss thoroughly to ensure all the vegetables and apples are coated in the creamy dressing.

        Taste and adjust seasoning if desired; add more salt, pepper, or sweetness as needed.

          Cover the coleslaw and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

            Before serving, give the coleslaw a good stir and garnish with chopped fresh parsley. Serve chilled for a refreshing, crunchy salad!
