Crockpot Turkey and Wild Rice Soup

1 lb cooked turkey, shredded (rotisserie turkey works great)

1 cup wild rice, rinsed

1 medium onion, diced

2 carrots, sliced

2 stalks of celery, diced

3 cloves garlic, minced

6 cups low-sodium chicken or turkey broth

1 cup frozen peas

1 cup corn (fresh, frozen, or canned)

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

1 cup heavy cream or coconut milk (optional, for creaminess)

2 tablespoons olive oil

Chopped fresh parsley, for garnish

Instructions
 

Sauté Vegetables: In a skillet over medium heat, add olive oil. Sauté the diced onion, carrots, celery, and minced garlic for about 5-7 minutes until they start to soften and the onions become translucent.

    Prepare the Crockpot: Transfer the sautéed vegetables into the crockpot. Add in the wild rice, shredded turkey, thyme, rosemary, bay leaf, salt, and pepper.

      Add Broth: Pour in the chicken or turkey broth, making sure all ingredients are submerged. Stir well to combine.

        Cook: Close the lid of the crockpot and set it to low for 6-8 hours or high for 3-4 hours, until the wild rice is fully cooked and tender.
