1 medium onion, chopped

4 cloves garlic, minced

1 teaspoon dried basil

Fresh parsley or basil, for garnish

Grated Parmesan cheese, for serving

Instructions

Prepare Crockpot: In a large crockpot, add the frozen Italian meatballs.

Add Vegetables: Pour in the beef broth and add the canned diced tomatoes (including their juices). Layer in the diced carrots, celery, and chopped onions. Toss in the minced garlic.

Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the meatballs are heated through.

Final Touches: About 30 minutes before serving, stir in the chopped spinach or kale and the cooked pasta. Taste and adjust seasoning with salt and pepper as needed.

Serve: Ladle the soup into bowls, and garnish with fresh parsley or basil. Serve with grated Parmesan cheese on top for extra flavor!
