Ingredients

6 ripe pears (Bartlett or Anjou), peeled and diced

1 cup brown sugar (light or dark, depending on preference)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 tablespoon lemon juice

1/4 cup water

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Pears: Begin by peeling and dicing the pears into bite-sized pieces, ensuring to remove the cores.

Mix Ingredients: In a large mixing bowl, combine the diced pears, brown sugar, cinnamon, nutmeg, lemon juice, water, vanilla extract, and a pinch of salt. Stir well to coat the pears evenly with the spices and sugar.

Transfer to Crockpot: Pour the pear mixture into the crockpot. Spread it out evenly to ensure even cooking.

Cook: Cover the crockpot with the lid and set it to low heat. Let the compote cook for 4 to 6 hours, stirring occasionally if possible.

Check Texture: After 4 hours, check the texture of the pears. They should be very soft and start to break down, creating a saucy consistency. If you prefer a thicker compote, let it cook an additional hour uncovered to reduce the liquid.

Serve: Once cooked, stir the compote again and taste, adjusting sweetness or cinnamon if necessary. Serve warm over pancakes, waffles, yogurt, or ice cream, or let it cool and store it in the fridge for later use.
