1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pumpkin puree

1 can (28 oz) crushed tomatoes

1 cup vegetable broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cinnamon

1/2 tsp nutmeg

Salt and pepper to taste

1 cup corn (frozen or fresh)

1 bell pepper, diced

Fresh cilantro or parsley for garnish (optional)

Sour cream or Greek yogurt for serving (optional)

Shredded cheese for topping (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain any excess fat and transfer the meat to the crockpot.

    Add the diced onion and minced garlic to the skillet and sauté until fragrant and slightly softened, about 3-4 minutes. Then, transfer them to the crockpot.

      Into the crockpot, add the kidney beans, black beans, pumpkin puree, crushed tomatoes, vegetable broth, chili powder, cumin, smoked paprika, cinnamon, and nutmeg. Stir well to combine all the ingredients.

        Season with salt and pepper to taste. Then, add the diced bell pepper and corn, stirring until everything is evenly distributed.

          Cover and cook on low for 6-8 hours or on high for 3-4 hours, allowing the chili to simmer and the flavors to meld together.

            Once cooked, give the chili a good stir. Taste and adjust seasonings if necessary.

              Serve hot, garnished with fresh cilantro or parsley, and topped with sour cream or Greek yogurt and shredded cheese if desired.
