2 cups cooked chicken, shredded (rotisserie chicken works great!)

4 cups frozen corn kernels

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, diced (Yukon Gold or Russet are ideal)

4 cups chicken broth

1 cup heavy cream or half-and-half

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional, for serving)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Start by shredding your cooked chicken if it's not already done. Dice your onion, garlic, and potatoes.

    Combine Base Ingredients: In your Crockpot, add the shredded chicken, frozen corn, diced onion, diced potatoes, minced garlic, chicken broth, thyme, smoked paprika, salt, and pepper. Stir to combine.
