Crockpot Beef and Noodles

2 pounds beef chuck roast, cut into 1-inch cubes

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups beef broth (low sodium)

1 cup carrots, sliced

1 cup celery, diced

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 bay leaf

Salt and pepper, to taste

8 ounces egg noodles

1 cup frozen peas (optional)

Fresh parsley, chopped for garnish

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet in batches, searing until browned on all sides. Transfer the seared beef to the crockpot.

    Sauté Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.

      Combine Ingredients: Pour the onions and garlic into the crockpot with the beef. Then add the beef broth, carrots, celery, Worcestershire sauce, thyme, and bay leaf. Stir well to combine all ingredients.

        Slow Cook: Cover the crockpot and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded.

          Add Noodles: About 30 minutes before serving, add the egg noodles to the crockpot. If using, stir in the frozen peas at this time. Cover and continue to cook until the noodles are tender.

            Serve: Once the noodles are cooked through, remove the bay leaf. Taste and adjust salt and pepper if needed. Garnish with fresh parsley before serving.
