Crockpot Apple Cinnamon Oats

1 cup rolled oats

2 medium apples, peeled, cored, and diced (preferably Fuji or Honeycrisp)

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

2 1/2 cups almond milk (or any milk of choice)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1/2 cup chopped walnuts (optional)

1/4 cup raisins or currants (optional)

Additional toppings: sliced apples, a drizzle of maple syrup, chopped nuts, and a sprinkle of cinnamon

Instructions
 

Prepare the Slow Cooker: Spray the inside of your crockpot with non-stick cooking spray or lightly grease it with a bit of oil to prevent sticking.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, diced apples, ground cinnamon, nutmeg, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, and vanilla extract until combined.

        Layer in the Crockpot: Pour the dry oat mixture into the bottom of the prepared crockpot. Then, pour the wet mixture evenly over the oats. If you're using walnuts and raisins, sprinkle them over the top at this stage.

          Cook the Oats: Cover the crockpot with its lid. Set to low heat and cook for 6-8 hours, or on high for 3-4 hours. The oats should be creamy and the apples tender when done.

            Serve: Once cooked, stir the oats to fluff them up. Scoop a serving into a bowl and top with additional sliced apples, a drizzle of maple syrup, chopped nuts, and a sprinkle of cinnamon if desired.

              Store Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat with a splash of milk for a quick breakfast.
